Step 1


Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper. In a large mixing bowl, cream together the softened butter, granulated sugar, and honey until light and fluffy.

Step 2


Beat in the egg and vanilla extract until well combined. In a separate bowl, whisk together the all-purpose flour, baking powder, and salt.

Step 3


Gradually add the dry ingredients to the wet ingredients, mixing until a soft dough forms. Do not overmix.

Step 4


Roll the dough into small balls, about 1 inch in diameter, and place them on the prepared baking sheet. Leave some space between the cookies for spreading.

Step 5


Gently flatten each ball with the back of a fork, creating a crisscross pattern on the top of each cookie. Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown.

Step 6


Remove the cookies from the oven and let them cool on the baking sheet for a few minutes. Transfer them to a wire rack to cool completely.

Step 7


Drizzle some additional honey over the cooled cookies for an extra touch of sweetness and flavor.
