1 tbsp | 15ml | White Wine Vinegar |
1 cup | 240ml | Neutral Oil |
2 tsp | 55g | SIDR Honey |
1 tbsp | 5g | Granulated Truffle |
1 tsp | 5ml | Lemon Juice |
½ tsp | 3g | Salt |
¼ tsp | 1g | Black Pepper |
In a medium bowl, whisk together the egg yolk, Dijon mustard, and white wine vinegar until well combined.
Slowly add the oil, a few drops at a time, while continuously whisking to emulsify the mixture. This should take about 5-7 minutes.
Once all the oil is incorporated and the mixture is thick and creamy, stir in the SIDR honey and granulated truffle.
Add the lemon juice, salt, and black pepper. Mix until well combined. Taste and adjust the seasoning if necessary.
Transfer the truffle & honey mayonnaise to a jar or airtight container. Store in the refrigerator for up to one week.
