Step 1

Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line it with parchment paper.

Step 2

In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and ground cinnamon. Set aside.

Step 3

In a large mixing bowl, cream together the softened butter and SIDR honey until light and fluffy, using a hand mixer or stand mixer. Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract.

Step 4

Gradually add the dry flour mixture to the wet ingredients, alternating with the buttermilk. Begin and end with the flour mixture, mixing until just combined.

Step 5

Pour the batter into the prepared cake pan, smoothing the top with a spatula. Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.

Step 6

While the cake is baking, prepare the glaze. In a small saucepan, combine the SIDR honey, butter, and ground cinnamon over medium heat. Stir until the butter is melted and the mixture is well combined. Remove from heat and let cool slightly.

Step 7

Once the cake is baked, remove it from the oven and let it cool in the pan for 10 minutes. Using a skewer or toothpick, poke holes all over the top of the cake.

Step 8

Pour the warm honey cinnamon glaze over the warm cake, allowing it to soak in. Use a spatula to spread the glaze evenly. Let the cake cool completely in the pan before removing it.

Step 9

Once cooled, garnish the cake with chopped nuts or cinnamon sticks if desired. Slice and serve the SIDR Honey Cinnamon Cake, savoring the warm and spiced flavors.
