Preheat the oven to 375°F (190°C). Season both sides of the chicken breasts with salt and black pepper, and set them aside.
In a small bowl, whisk together the honey, soy sauce, olive oil, garlic, and grated ginger until well combined.
Heat a large oven-proof skillet over medium-high heat. Add the chicken breasts and sear them for 2-3 minutes on each side, until golden brown.
Pour the honey mixture over the chicken, and spoon it over the chicken to coat it evenly. Transfer the skillet to the oven and bake for 20-25 minutes, or until the chicken is cooked through and the glaze is sticky and caramelized.
In a small bowl, whisk together the cornstarch and water. Remove the skillet from the oven, and transfer the chicken breasts to a plate. Add the cornstarch mixture to the remaining sauce in the skillet and whisk it until smooth.
Return the skillet to the stovetop and heat the sauce over medium-high heat, whisking constantly, until it thickens to your desired consistency, about 2-3 minutes.
Spoon the thickened sauce over the chicken breasts, and sprinkle with sesame seeds, if desired. Serve the Honey Glazed Chicken with your favorite sides, such as steamed vegetables, rice, or salad.
